I would like to see this gentleman cross his arms with smelt, Upset Duluth wise.
I’ve never understood the appeal of smelting. He’s out before dawn, holding a two-inch fish. That’s the definition of Upset to me.
I have never eaten smelt, but am willing to give it a try. Does anyone have a recipe? Curiously, epicurious.com does not. Also, is it worth it to cook smelt at home?
They don’t look upset to me.
If you’ve never had smelt, go to a place like the Tappa Keg before spending any time in the kitchen cooking. If you like it, you can try improving on it at home. If you don’t like it, then you might as well keep it from ever entering your home.
